Chicken Enchilada Casserole

My family does birthday dinners... Usually the person we are celebrating gets to pick what they'd like to eat... And I usually cook it... But on MY birthday, I ALWAYS choose this casserole...
Tonight, I tweaked it a bit, based on what I had on hand.

First, boil 3-4 boneless, skinless chicken breasts. Let cool, then chop into bite-sized pieces. **Save 1 cup of the broth from boiling**

Then, saute 1 onion in 1/4 cup butter (1/2 a stick)

To the onion, add 1 can cream of chicken, 1 can cream of mushroom, about 1/4 cup green sauce, 1/8 cup of chopped jalapenos, 1 cup of broth, 1/2 tsp of salt, and 1/4 tsp of pepper.
Simmer for about 3 minutes.

In a large bowl, rip 6-8 flour tortillas into bite size pieces.

Add chicken to tortillas, then mix with liquid mixture.

Spread into a 9x13 baking pan and cook at 350 degrees for about 50 minutes

Take pan out and add about 1 cup of shredded cheddar cheese and cook for another 10 minutes, until cheese is bubbly.
